I just finished reading the archery guide and was about to try it out.I have both a bow and quiver along with arrows. My marksmen skills is around 5. Not much but it allows for something. Anyway i click shoot and then the chicken and wait. The accuracy bar doesnt seem to go up and the when i fire my arrow it always misses. What am i doing wrong? Not a high enough marksmen for a chicken or not waiting long enough on the accuracy bar?

I didn't even know you could shoot chickens.

Anyway, 5 is way too low. Drop to a sling, get as close as you can and limit their movement via signposts.

What your shooting at has to hold perfectly still. Anytime it moves it will drop your meter down really fast. Basically, you need to either pin them in with signposts as said, or draw aggro and tank whatever you want to shoot while charging up.

Also, use combat maneuver "meditation".

Meditation is no longer useful for using a bow. It actually has penalties to use.
