As far as I can tell, it's to delay retaliation as much as possible. As cruel as it is, it seems to be safest for the raider.
While it may be true in some cases, many of the time it doesn't apply especially if a stronger faction targets a weaker one or a hermit. Most of the time, someone that can foster up higher tier characters and gears are concerned about a counter-raid from someone that is just getting their brickwall up. The other reason I can think of doing this is to deal as much damage as possible to an enemy faction. The difference in result in the magnitude of the damage caused to the village as the latter may go out of their way to dig up every single crop square while the former may not do it due to how much effort it takes to look for crops to destroy for a raid (cupboard is convenient to destroy to due being located solely inside buildings).
