Fix is simple.
Dont allow placing building signs while in combat.

that's not a fix, people will run around the guy without aggroing him and place signs anyway.
but that is a nerf for sure.
There was a wise soviet conscript that was surrounded by the enemy on the battle of Stalingrad. A mortar shot teared his pants apart causing a big hole in his pants right on his right butt cheek. He felt a glorious cold ass breeze of wind on his butt cheek, like it would be sent by stalin himself, he said - hide your butts

Don't allow placement of stuff within 30 tiles of any character in combat.

I suspect that removing the bounding box of construction signs until the first item has been built in (and conversely prohibit building in the first item of a construction sign that has become obstructed) is a better solution.

This sounds like a quite good solution.

I dont actually understand the problem at all. A lone guy (with a horse) in the wild is "ganked" up by three riders, he dies. Sounds legit to me... is he supposed to survive?

Just because they outnumber him, they shouldn't be able to automatically kill him with no real chance for him to escape. Before horses, you'd have to flank the person if you outnumber him and time your attacks, or just be better chasers than they are runners. Horses just further exemplify the importance of having higher numbers, which is already stupid important. Actual combat skill is minor in comparison to legacy.

yes, but getting ganked should not be your death sentence. Ganking is OP as it is, it has its own advantages, but with horses it is even easier. Just because they grinded their horse qs more than you did it and that they had plain more numbers should not be a huge the factor of your death. Yeah, before you had to atleast plan and try to flank, and it was actually dangerous to chase(partially also because combat had more depth) someone who knows what he's doing, but now it is just about whos stamina ends first.

what would it change when there's a army behind you?
It would had been even easier to kill him if he would have done that, since I wouldn't have to worry about getting dismounted and coordinating the moment of attack to hit through his defence spam and all i would have to do would be just lock on him and just spam punch his defences off while my friends on the horses are circling around and doing the damaging hits(chops/cleaves/stings).
