A similar incident occurred in my settlement only at a larger scale. I had just constructed a dream catcher and within the day it was just gone. It happened again with a loom like a week later. Neither showed any signs of decay and theft seems very unlikely as they were enclosed in a palisade fence.

As for the baskets, it sounds like they where stolen and the carrots dumped on the ground to rot. You where probably lucky to arrive in time to get them.
