Time not elapsing on cheese.

I noticed that if you place curd into a cheese tray, from your inventory to tray that is already placed on a rack, it does not begin to age. I placed a full try on to the rack at the same time as the pre racked ones, and it aged just fine.

yeah. timer starts when you place a tray on the rack. same thing for herb tables, if your seedlings die on the table and you empty and refill on the table, the time doesn't start. just pick it up and place it back in.
