if you use a decent bow and bone arrow, you can do a significant amount of damage to something like a fox and eat up a lot of its hitpoints. the best strategy for you is probably to kite the fox out into a narrow area of shallow water and shoot it from deep water, then block it in the shallow area with your boat and punch it until it either dies or starts to attack you again. if it starts to attack you again, just shoot it again and repeat

Fox are pretty hard to kill now, I had to break past 50 perception to make any significant damage to them

If you find a fox on a small peninsular (finger shaped bit of land), it doesn't have to be surrounded by water, cliffs will do. You can shoot the fox and perhaps get a punch in if it flees. You can then track the wounded animal, follow after it and watch for its trail of blood. The larger the animal the longer it will take to bleed to death. If you allow the battle to end (olive branch in the top right) then you might be able to get another shot in as well.

Injured animal can leave a blood trail or at least they could last world. disengage when they flee, and follow the blood trail to where they stopped, then shoot them again.

This. Bows are completely useless right now, at least for hunting.
Just do what the guy before said, lure it into a big strip of shallow water, punch it till it runs and chase it with your boat.

It depends on the attack you use. If you use punch, it's unarmed, if you use chop or some other weapon attack, it's melee. The skill only really matters for creating the opening though. you can create an opening with unarmed and damage with melee.
