Try to start with Kiesseläinen, abandoned camp....craft 2 javelin and go hunt....i've just started a new game with this settings, killed 2 elk, 380 cuts drying right now for the winter... and fine fur too
You only need good tools and weapons...Kiesseläinen are good in timbercraft, so could help a lot.

Build a shelter on the place and dry the meat during the spring. During the summer you need a village near by to smoke the meat, then eventually you will build your own small cabin with fireplace and everything...
