Flour is dry, why would it spoil within 1-2 weeks? I think that if stored properly, full grain flour lasts easily more than half an year, closer to a whole year.

Long time ago grains were not immediately milled into flour, as flour was difficult to move around and store compared to grains. Mills were not a thing that everyone had either.
At least in Finland, people used to immediately bake their flours into bread, and then preserve the bread for longer times. You baked all the bread that you eat in the whole year in only a few days.

Traditionally rye bread had this hole in middle of it, after baking, the bread is hanged near the roof like this.
It will get dry, and when it is dry, it basically never goes bad. Lasting a lot longer than grains or flour would.
I think that dried bread has been used as a food in some ships as well.

Main difference between flours is that there are 3 parts in the grain.
Germ, endosperm surrounding it, and the outer layer.
In some of not-so-healthy flour, which most of the used flour is, only endosperm is used, the outer layer and germ(core) are removed before the grains are milled to flour. Result is not-so-nutrient-rich flour. As the core/germ has lots of nutrients, and the outer layer has lots of fiber.
In full grain flour, all of the three parts are milled into flour, resulting in much more nutrients in the flour. But this has a bit different texture and does not taste as good, which is why the core and outer layer are usually removed. Because people prefer food that tastes/looks/feels better in the mouth.

"Real flour" don't last long cause it gets rancid after some weeks cause the Germ.
Nowdays we produce mostly only white flour (that is energy and sugar pretty much) ... even in the so called "full grain flour" we can buy nowdays the main ingredient is still white flour (endosperm), while the other parts are added later on, like it happen for vitamins artificially added.
To give you an idea, those kind of flour are enriched like if I give you back 1 dollar after stealing from you 50 dollars .... plus we don't know exactly all the nutrients that are beneficil for us.
So, we first remove everything but the endosperm ( for conservation purpose and better avaibility cause the industry) then we add some nutrients artificially later ... and everytime science improve, we discover that the lack of some nutrients are related to certain diseases, we add artifically more stuff, like it happened in the '90, another nutrients has been added to flour by law beside the basic vitamins added since 1942.
The thing is we are still missing tons of nutrients, some we already know about, and tons that probably we don't even know ... so it's a dumb process, but it's how the industry works, at least this way most of us can eat something .. sadly not the whole planet still.
Yeah back in the days, grain was conserved and then bread, but not flour ... that spoil like many others things, it's a misconception of our era that flour last forever, cause that it's not "real" flour, yeah taste better, easier to cook,etc .... but still, lot of diseases started from there for the lack of nutrients in our diet.

That is just pure bullshit. Do you have anything to support your argument?
Maybe in your corrupt US mills they do this, but not in Finland.

It still lasts more than a few weeks, maybe if you soak it in water it wont last that long.
Even if "real flour" would last that long, there is no fucking point in making this "real flour" because the harvesting season is only once a year.

Humans get more variety from food now than ever before. Many products if not all are available all year. Back in the old days before industrialization and stuff you ate what you got, which usually was not that nutritious.
Its just stupid to say that we would not get enough nutrients. Maybe if you are fat american citizen only eating white bread and processed sausages. But most people are not like that, at least in Finland.

Here is one example that proves my point. At least in Finland, we no longer have that disease. It is caused entirely by lack of D-vitamin and other nutrients.
It was very common few hundred years ago, because people ate monotonously. These days, not so much. For example, D-vitamin is added to milk in Finland, to prevent such things.
