I'm really loving Stellaris too.
It's like Crusader Kings/Europa Universalis had an orgy with Civilization and Master of Orion (and Sins of a Solar Empire was recording it all) and the baby was born with the best of each. It's also impressively full of nods and references to all the great sci-fi movies, books and games out there. I've even found a ceramic flower pot floating around an ocean world, lol. Still looking for the whale.
I've got this brilliant message that completely owned me yesterday when I was arrogant enough to try and attack a Fallen Empire I found just because our fleets were "equivalent". I completely ignored the fact that their technology was Overwhelming, though.
My empire - a fast spreading, slaver, xenophile and religiously fanatic hive of insectoid warriors - was conquering the galaxy without remorse. No one could stand us - and the current Divine Leader had awesome traits that lowered ship upkeep and increased energy output. This allowed me to expand and wage war like never before. We enslaved more than 150 pops from 8 different races in less than 30 years. But in his arrogance, he attacked the Fallen Empire...
Our whole fleet was wiped - it was an honourable fight, taking down many of their ships - but we lost. Suddenly, their whole fleet WARPS RIGHT INTO OUR HOME SYSTEM, light years away. I was like "WTF?"
Hopeless, I quickly cede to all their demands (abandoning 3 shitty colonies and being publicly humiliated) to ensure peace (and my empire's survival).... But they were not done yet - and I was greeted with this amazing message:

And so the "oh so promising" leader and archprophet dies... by his own arrogancy. I just love the narratives and storytelling these games allows us to create.
And just to add a bit more of flair (and because Interstellar was awesome) here's one of my fleets engaging some hostiles near a black hole because it's epic:
