Bowyery (bow making), flint knapping(not in H&H but was inspired by H&H), fletching. Pottery, hunting. Building primitive/semi primitive shelters, farming. But now its winter so no hunting and farming :P. So I get to play H&H haha.

I never did any of those things besides hunting twice, building a tee-pee and wigwam and farming/gardening when I was a kid with my uncle.

H&H opened a whole world of stuff I ignored and took fore-granted for a long time. I no longer want a house or condo in a city, don't care to go partying or "out on the town" anymore and instead now want acres of land to retire early on so I can go live life like I do in this game haha! Enjoy the next half of my life rather than working like a slave for a .5 acre piece of land with an overpriced mortgage and overpriced property taxes.

That's how good of a game/idea this is.

What you are doing kooks closer to Unreal World but it's really cool that you are inspired by these survival games that you try it out yourself. It also sounds like a really good life that you are living there doing that. Maybe you can start a thread on a journal on how that life is.
