Surveillance camera is not so ubiquitous in my lands, but if they are, there is way to obscure your face if you really must do this.
You can shut it down by simply removing the GSM chip from its socket if you like. Only the car will report a critical malfunction and will not allow you to start its engine anymore. Then if you need to start that engine, you have to remove electronics from it and somehow make a classical induction system and a platinum contacts case fit it. Then work on the servo-direction, get an ABS that can work as a stand-alone from some old car, etc. At which point it could be easier to craft a motorcycle by yourself in your garage from old parts and use that instead.
And the fun fact is unless there is some carnival around you, you will be the only one hiding your face in a crowd. Maybe software can be tricked and this will require human operators, increasing surveilance costs massively, but it's still doable if who wants to track you down has enough resources, like Police or a rich guy paying big to private agencies, for example. For example, banks do not spend a lot to stop you from robbing an ATM or from hacking/scamming cards in virtual space. They only want you to be on camera when you use those money in real or when you take them from the ATM, that is all they need. They know you can not hide and they know their men will find you before police does.
BTW, if you go into hiding, remember usage of a debit/credit card is even easier to trace than your image with covered face. Use only cash. Cash can be traced also, but it's a huge effort to do that and it's too slow to really matter. (What serial numbers money had when they left the bank, where each banknote went, which were used where...) It's hard, it's slow, it can only find you if you stay too long in the same area, but it's doable. It all depends on how much they want your ass on a silver plate.
