Materials, especially boards, are large and difficult to make off with. Most thieves at this point in the game lack a stable home. Your bucket was probably a direct upgrade to them and they snagged it to use it.

Due to birch bark being exstinct in some areas he probably just used your bucket so he could drink water, in my opinion he's not even a thief, good on him for just taking what he needed that wasn't hard for you to make instead of just destroying and dropping everything you own.
