I am sorry if it is stated somewhere (did not find it though)

But at what time on Saturday does my life end? (server reset)

if I had to bet I would say around midnight, Sweden time.
Make friends with the other crabs or try to escape the bucket.

Most likely the exact time will remain unknown until the restart has been completed, like the last two times. The devs need to do some stuff at the start of the world, and it's always unknown how long it takes.
