HnH Style honeybuns (Recipe and taste-review inside!)

Postby shubla » Sun Jun 10, 2018 10:01 pm

how to make them?

I thought of just mixing water, flours and honey and putting it in the oven like in hnh. Maybe some yeast should be added?

------------

I have made them!
I invented a completely new recipe and made some honeybuns with it.

Recipe:
HnH Honeybuns Purus Cor Style

Ingredients:

Dough:
50g of yeast
5dl of milk
2 chicken eggs
2dl of honey
Some salt (not too much, very unhealthy)
~16dl of wheat flour
1,5dl of rapeseed oil

Sauce:
butter
cinnamon
honey
fine powdered sugar

Instructions:
Prepare a big bowl, put it in warm water bath, we want to achieve around 35°C in the dough
Add milk
Add yeast, cracked to small pieces
Mix
Add all of the remaining ingredients, except for the flours
Mix
Add flours until the dough looks ok, mix with 1 hand, pour flour with the other
Let it be in the warm water bath for around 1 hour, it should increase in its size a bit
Divide the dough into two equal sized pieces if you have small space to work in
Use rolling pin and roll the dough into a shape of rectangle, few centimeters thick
Make the sauce by mixing the ingredients listed above in good quantities relative to each other, and spread it evenly in the rectangle
Roll the rectangle into a roll
Cut the roll into pieces with a width of 5 centimeters or so
Lay them in the baking tray, be sure to use a greaseproof paper under them
If you want, you can brush some mixed raw eggs in the surface of the honeybuns for cool colour effect. Purus does not recommend this.
Put tray in the oven, preheated to 200°C
Wait until they have good-looking colour, if it’s black, you have waited for too long. I waited for a bit more than 10 minutes
Eat them, invite the whole village, because there will be lots of them!

Some pictures of the process

They tasted good. Can recommend.

I don't know how Jorb imagined them, but I myself imagine them as a kind of sweet wheat roll (like the base of a cinnamon roll, without the cinnamon), glazed with honey.

There's much more to it, shubla:

honey, wheat, warm water, yeast, (brown) sugar, butter, buttermilk, egg yolk, vegetable oil and cinnamon

if you want glaze on it:
powder sugar, water and honey

enjoy :)

Found a recipe that doesn't even include any processed sugar, just honey:

3 cups all-purpose flour
2 tablespoons (or two packages) yeast
3/4 cup milk
1/3 cup honey
1/4 cup butter
1/2 teaspoon salt
2 eggs

Haven't tried it myself but it looks interesting enough to try making them, http://chickensintheroad.com/farm-bell- ... oney-buns/

Should note that I haven't found a recipe for making a sugar-less glaze, but I think some honey drizzled over the top would do nicely enough. The website I linked does include a separate recipe for a glaze that uses some powdered sugar, not sure if just following the directions and omitting the sugar would be advisable.

Won't come out quite right and probably won't dry over time. Still, if you're making a small batch to be eaten soon(ish) and can wait to do any kind of glaze, you can find sugarless glaze recipes that are mostly honey.

edit: @shubla, there are "buscuit" (baking powder) bread recipes without yeast that make good cinnamon rolls, so don't see why they can't be used for honey buns. I'd have to dig as I don't have one on hand for honey buns, but I could probably sweet talk my grandma out of her cinnamon roll recipe (family secret... I only get it when it passes on she says).

I agre that it would be weird to add sugar, as honey is almost pure sugar by itself.
