Disclaimer: haven't actually tried this myself, but apparently you can plant trees, they just don't grow during winter. So you can spend the entire winter planting neat rows of saplings and when spring comes they will all start to grow.

Actually, trees do grow in winter.
Maybe not as fast as in spring though, I don't really know about that.

Trees does grow in winter with same speed that other seasons. But when snow tile replaces wald - tree speed slows up.
As for winter activities - there's nothing unique you can do in winter, but cant do other seasons, so im just not playing this time.
Except collect some snow, craft some snow globes and store some in cellar for further use.

Having just returned this is my first winter, it was actually really fun to watch winter roll in over the course of a day or two slowly blanketing the land in snow.
It feels harsh as I've not really gotten setup properly yet, having to dig out snow to place buildings is a pain and I guess my study a dandilion and raid an ant nest credo quest is going to be a lot harder but it generally adds to the gameplay.
