I have no clue if this has been asked before, but is there some way I can start a H&H Server of my own that only I can access?

No, Haven & Hearth is a proper MMO managed by a single server. I know the trend in recent years is games where anyone can run a server, but they are a very different beast with different styles of development and interaction.
Opinions expressed in this statement are the authors alone and in no way reflect on the game development values of the actual developers.

No, but this most recent world, everyone was spawned on the same continent, which meant that the other continents were very sparsely populated. So if you want to play alone that should be pretty possible, you just have to make it across the ocean
