So, every time I update java I lose the hotkeys configuration and so on ...
Is there any folder I can copy/paste to solve this problem?
Or, where are the game settings saved, including the hotkeys?

oh ... default client of course!

Some settings are saved to the registry. I learned this after helping some poor default client guy who managed to make his chat extend above the top of his screen lol.

Just as Sir Robben have noted. Keybindings can be backed up along with some other settings by exporting the branch in regedit:
HKEY_CURRENT_USER\Software\JavaSoft\Prefs\haven\hafen
