3-4 days. If you have a beehive, it takes significantly less time to grow crops within its radius.

Did you discover straw yourself? If so, you should be able to make other straw crafts and buildings. Otherwise, it's straw, blocks, boards, and thatching (boughs, etc)

I have about a dozen or so trying racks with WWWs, you get a barley and flax and the like eventually, just keep spamming them.

Not true. Crops are regional, if you keep collecting from the same area and drying those seeds it's possible you don't go over an area where barley WWW spawn.

Best bet if you're missing critical crops is to do a straight line forage. Walk 10 minutes before starting, only grab WWW and just go in a line. Do this in a couple directions and you should be good.
