Timing Fresh Hemp Buds

OK, what am I doing wrong with hemp buds? I've been trying this whole world (both 16s) to collect them with no luck. In all the years I've been playing
I've never been this unlucky! I finally started checking the crop every 2-3 hrs and will come across a stage with scattered orange flowers
but not able to harvest. This lasts several hours until finally changing to normal fiber/seed crop. I'm confused - I don't remember this
stage with scattered flowers but no buds lasting for hours. Does this happen before? or after? the fresh bud stage (that lasts 5 minutes )

Fresh Hemp Buds are harvested from blooming Hemp crops. Note that it destroys the crop's seed(s)."

This is what the wiki says. I rarely harvest cannabis myself and don't use drugs.

stage 3/4 is what you are looking for. not the other two stages in the following screen shot. This is enders client fyi
if you space out planting multiple rows a few hours apart you are more likely to get the timing correct

Thanks! Yeah, I dont use ender, that would make it a lot easier. I´ll have to try staggering the crop. It just jumps from 2/2 to 2/4 when I'm not looking - so frustrating!
