The categories that cornucopia looks at are a bit broad and undefined. Apple Pie is fruit for the purpose of the food saitations.

Remove your apple pies from your inventory before crafting cornucopias. Not a bug.

Interesting tidbit here. So you saying that if it has a bread or fruit for satiation, then it should be able to use that item for the appropriate category?
