He's trying to say that there's no appropriate container for the rennet except the bucket.
Which means separating some rennet from the rest in said bucket is impossible.

It would be nice if you could only fill the curding tubs with 0.4L.. that's the amount needed to fill it with curds once (ocd :D)

Same reason you would want to store any liquid in not bucket. Or do you only use bucket?
