I put a Death's head Chrysalis on my study table and an hour or so later it was a male silkmoth. Is that normal?

Yes it is. Has a ''kill'' option if unwanted. Not a bug.

If you don't kill them before studying, it sometimes happens that a Death's Head Chrysalis matures into a Silkmoth inside your Study Report. This will not award any LP.
