Curds turning directly into generic Gouda

Hi I've been having an issue with my cheese industry which had been working fine previously. Currently when I put trays of curd into a rack in my cellar they mature directly into generic Gouda instead of cellar cheddar. I thought I had been missing the window the past couple of times, but now I've witnessed them transition straight from curd to generic Gouda. What could be causing this?

Mixing your milks causes this, only explanation I can think of.

If you use “curd”, then stop mixing milk from cows amd sheeps.

Just to note, unless it's been fixed (don't recall seeing a fix for it), keep your tubs separate, even if they appear empty. You'll still get generic curds.

Yeah, Boschetto is one that is made from a mixture of cow and sheep milk, but we also need goats and then we can have a much wider variety of cheeses, there are a few cheeses that are made from a mixture of cow, sheep and goats milk.

Personally, I don't find it a problem in game, it's not hard to keep your cow and sheep milk/tubs separate ... it mainly crops up with newer players so maybe it should state it somewhere in the cheese making process in game. But it would be nice if we had more varieties of cheese from mixing milk though.
