Grown leeks always give only 1

I've replanted leeks like 6 or 7 times by seed and 4 times when grown, and while by seed they multiply normally, when fully grown if harvested they always give only 1 leek, and I even have farmer credo.
Since it's the only plant that behaves this way, I suppose this is a bug!

there's another stage after that, using amber client its easier to see

Yeah, they give 3, you are just not leaving them long enough. :)

Sorry, since there is a phase with seeds and another where they look fully grown, I didn't think there could be another phase!

Yeah, not a bug, but I agree that it is a bit visually indistinct. May fix when I look at them again, since I had some other complaints about the flowering as well.

This. Farming should be more realistic when it comes to seeds.

Current one-seeds-three dosn't make sense for eg. carrots (as it's diamentral to reality), for flowers (where seeds are generated after the flower withered), also onions and beets are planted by seeds (which are formed after the root had grown) not by putting existing roots into the ground.

Last stage should be seeds for all crops, produce already has spoiled at that point. Perferably a while (like random between a RL day or two) after going into seed stage the plant should replant itself (while still on plowed ground) with normal quality rules.

While this is true for carrots, onions actually double themselves if given enough time, that's why sometimes when you cut them there are 2 "cores".
The idea sounds interesting, but I think that when becoming actual gameplay this would spoil farming with a rise in timing difficulty... The game already pushes players to play a lot and at least some time each day, sometimes needing aimed log ins with annoying timings, the most notable example of this being steel, this would make continuity even more necessary.
Or at least this is my opinion!
