Hi, I don't have the option to craft meat-in-jelly even though I've made a full bucket of gelatin, and purchased both hunting and mining.

UPDATE: Meat-in-jelly and all other gellant recipes unlocked when I found some cave slime, so I'm guessing that gelatin from hides doesn't unlock gellant recipes despite being usable in them.

You most likely crafted Gelatin directly into a bucket or barrel. Take some out to trigger Discovery.
