To expand why:

Age until adult can give you important information on whether or not to keep breeding bulls while new ones grow up. Age past adult can give information on when the first pregnancy is likely to finish.

It's mostly the first one I care about.

As the only cattle rancher in my province who uses the Name feature to actually name our animals, tonight I set our herd back by 4 days because I killed the oldest male calf. Now I have to use a Google spreadsheet to track the birthday of livestock.

For all other purposes, the cattle roster is sufficient - please add Growth to the roster so I can dispense with the spreadsheet.
