Which mushrooms cann't be potted? Can you list them?
I've only ever potted the cave mushroom. I haven't even tried the others—I just planted them in the mine shaft.

And why do you want to do that?
The obvious one is to quickly improve quality (water, fertilizer). But maybe there are other reasons?

Many mushrooms are unplantable, such as yellowfeet and puffball. I'd like it more if mushroom cultivation was made its own thing, rather than being lumped into gardening/farming as it is now.

I rly wish i could plant Royal Toadstool
But yeah, stuff like Field Blewits, Ruby Bolete and Black Trumpets would be rly cool to be plantable, specially because of Alchemy.

Most of the mushrooms aren't getting anyone out of their base, unless it's a forager pick quest, which wouldn't be affected

Birchbark Bream, Creamy Cock, Pea Crop, Pea Pie Dough, Ring of Brodgar (Seafood), Spring Stew, Unbaked Poultry Pot Pie

I haven't tried any of that for ages, hard to believe those recipes forgotten by gods can yield something useful.
