Well hives produce new queens to make new hives. Those could be a curiosity.

I have frequently desired for it to be necessary to locate wild hives to find queens to start hives in a village, and then to have to manage and grow those hives from wild bees and queens produced there. This would also likely produce another trade item in High-Quality Hive Queens.

I meant I know how real bees function. I am not a programmer.

Bees typically did reside in hollow structures such wood trunks etc in them more temperate regions of Eurasia.
Wild "hives" could perhaps be harvested either in a tree trunk or as a free formed swarm.

Edit:
Catching a swarm to put it in a skep would be pretty easy as long as you find the queen. Getting the bees out of a trunk would be very messy, and maybe best to leave it in place and
harvest it for the honey/wax and destroying it in the process. The old skeps were destroyed during harvesting. Relocating the queen and some of the bees to a new skep would create a new functioning skep/hive.
