1. so q doesn't get tanked by averaging
2. so i can shift right click an inventory full of crap in there

It also lets you undo accidental additions, and additions by 'helpful' villagers who are trying to take care of things without necessarily knowing how to manage it.

Farming is decent.
Stockpiles are most excellent.
Troughs. Still terrible.
