Typing /sit or :sit into console should make your character sit down on the floor crosslegged

This could improve healing over time, similar to the day/night slider in legacy and stamina should regenerate 3x's quicker while sitting

Starting the new world inland with only one drink from your kuksa can get annoying after a while, or if you're attempting to cut down your first tree with a stone axe and .40l of water, etc etc etc

For faster stamina regeneration though. Sitting in order to heal doesn't make much sense to me.

More basic animations would be also cool, such as poiting at something and giving something to someone.

Kaios, excellent plan.
In regards of a proper simulation this command should knock you out cold at the end.

But I'm for the sitting down to regain stamina.

Why not have a meditate skill to heal woulds... slowly. So if say, you are unable to get a cold press, or whatever healing thing is needed. Meditation will "start" the healing process on one wound. But then this wound will heal half as fast.
