I was pretty disappointed to learn that you can't damage animals with catapult shots, could this be changed? :)

Trolls can hurl rocks at us so I see no reason why not.

could you explain how it would be feasible to hit something that runs that fast with a catapult?

Knowing jorbtar, if they let them get hit by catapults, it'd probably be to catch the rocks and through them back.
