Build with some logs and its quality would be depend on the wood's quality, carpentry and farming. If mushrooms are grown in the cellar, they wouldn't be affected by the season. Grind mushrooms collected from the woods and water together and apply them to logs. Mushrooms usually need to be hydrated before harvesting, so farmer should make sure that the air has become evenly humid.
Obviously you could not farm ALL mushrooms. There would be few species that could be grown in captivity mostly for larp reasons and then toadtools, boletes etc. would have to be collected from forest. This is how it works RL too.
