Allow sap tapping a few additional species (Sycamores can be tapped, as do some species of Walnuts, in particular black walnut and butternut, though common european walnuts usually aren't).
Add transforming their sap into syrup with a still (Cauldron will be more accurate but I like the tech gateway required). A more agressive distillation ratio is ok (25:1 vs 10:1) and the resulting production should be about as good as honey in sweetener recipes - just with a different FEP profile. I'd take it as a e.g. 2x buff to existing sap FEP contribution. Don't really want it to be very META, just don't feel as a complete waste
You may also add Maple Wine, Birch Wine, etc. - a fermented drink prepared similar to a Mead. I'd say it should require making a Maple/Birch must first since tree sap has some things that kill yeast and processing will reduce their potency. this must can require either a raisin (dried fig, plum or grape) or just some water dilution at a cauldron.
