Important question. Can my character eat meat in Christian fast?

Different foods give different stats. Player with some religious views is limited to take up stats of his character. Let's stop religious discrimination. Hindus do not eat beef and Muslims do not eat pork. Is it possible to compensate this in game mechanics?

I'm not even sure you have a point. Just like in real life, those things continue to exist and yet those who follow those religious beliefs still don't eat them. They do not simply disappear. There are multiple ways to compensate for any given diet, whether or not they are as efficient is beside the point. It is your choice not to eat them and if it is that important to you then bear the consequences.
