there's nothing "breaking" hunting. you're just doing it wrong.

build traps. hunt in groups, cut off retreat.

i must admit, that before the animals ran away i could just walk through forests in mordor slaughtering everything while watching a tv show and only half-paying attention. Now that they run away when they're lower on hp, i actually have to pay far more attention to hunting, which makes it more engaging and fun.
Now, some animals actually escape me , opposed to just dieing whenever i see them.. which is a nice change of pace.
Plus i like the fact people have to work a bit harder to hunt now, in a way that isn't dependent on grinding-for-more-stats/skills.

Well, I see I shouldn't have believed what I read. It seems that the trick is to kill things not too high level - level Is for example ;-) and to avoid foxes. Boars are easy to trap between oneself and an obstacle. Deer are about as easy. Foxes and rabbits are a PITA; don't touch them unless you can one hit them, or maybe 3 hit at max, and carry tea. I have neither seen nor attempted any bears. Also the deer and boar I've taken have been low enough level that I could 3 hit them. They _might_ get smarter given more time.

I can still whine re LP - I won't be bothering with level VII foxes, and they used to be an LP mainstay. But I don't have a food problem, and wouldn't even without my helpful farmers. (Well - I haven't actually killed a sheep or a cow since the changes; perhaps they are as elusive as foxes - which would be absurd, but so is the boar-ish stupidity.)

If you want to kill a bear build yourself a bear trap out of fire place construction sites.

x = fireplace construction site with one branch in it
_ = clear space


build it, search for a bear, get it to chase you, then run back into your trap.

The bear will be able to chase you into the entry through the two gap, however I believe the bear bounding box is too large to fit through the single gap, so running in there will make you safe from the bear, so you can pew pew it to death with your arrows.

This trick only works with help, you need to get your friends to run in behind the bear and block off one or both of the empty spaces for the bear to get out from. Then it can't run away PEW PEW PEW PEW
