So long as the system is based around a universally flexible "learning Point" and different activities yield different rates of reward people will 'Grind' the most LP per unit of time activity they can and 'Dump' that into the skill they actually want to become proficient in.

If universal flexibility is sacrosanct (many feel that way though I do not), then either the LP:time rates must be finely tuned to be so close to equal that other factors such as actual material needs will be decisive. Or some kind of diminishing return for repetitive action (temporary probably being better).

What a horrible ideology you possess. The whole point should be so there's no reason to find away around anything. The tasks in-game that actually matter are what should be the good LP sources. Farming, building, cooking, hunting, mining. The list goes on.

Chopping 1000 fucking trees for hours should NOT be the best source of LP. The person that puts forth the dedication, effort and time needed to improve their village, or their own home are the ones who should be getting the LP. Not the people who clearcut forests or spend hours digging just to murder their neighbour and steal their hard work.

Horrible or not, it's just the truth. People who grind will always grind, regardless of how many LP nerfs are done. By nerfing the LP gained by everything they are mostly affecting people who don't actually grind at all, because the grinders will just move on to something else that is more rewarding. Even if taking care of your home is LP rewarding somehow, people who grind will look for the most rewarding activities behind such and repeat them. If you want varied actions to be rewarding, grinders can do that too. It doesn't really matter how much people come here and cry about something being the new grinder's heaven, they'll just move on again and again and again endlessly.

I suggest the digging be unnerfed, and buckets be nerfed to save the environment

Making digging the best way to grind will ruin soil nodes everywhere.

Personally I've always thought single-purpose end-all experience points were a bad idea.

I'm still unsure how chopping down trees and turning them into wicker baskets educates me on how to mine ore and improve my marksmanship.

Nerfing this? Lol? What they should be nerfing even more is Hunting. On top of that, mining is pretty ridiculously easy LP too. I would say they should probably halve BOTH of those first, before lowering LP from anything else. And.. increasing LP in farming.
