But what if a recipe just needs milk? Pancakes for example, you don't make the batter out of curd or butter, you use the liquid form of milk.

Someone opposing the following idea: milk gets sour in 8h RL, unless stored inside barrel inside cellar/mine (for cooling) where it would last -say- 2 RL days.

So enough time to make pancakes, butter etc. or do trades.
