So, we have a Ghost spies problem - they are ideal for it. But, they have own mind, so ghost of your kin will be own by player, who owned your kin heartling. Bear ghost will be controled by AI. And you cannot see what do ghosts. About other undeads - when corpse fill the magic, in there cleared all traces of the mind. Also, necromancer fall into specific trance that allow to control undead, and gives ability to remember aura and summon soul, that was in body before death. But trance drains 0.5% stamina in second (when stamina is over - trance drains (10/Psyche)*SHP/sec), and your slave may "disconnected" if he walk too far from you(In this case you lost some HHP, but less than 60, and die) or if he receives his orders... Oh, and ghosts doesn't cause trance, but their "life area" is 3 times less than other undeads and move with summoner (other undeads has unlimited life area but you can't change orders or resurrect them again). Max. control undead is 3, but you must train to reach tjhis point. All undeads over max. controll will die after "disconnect"...
P.S. About magick missiles - I dont know about missiles, but enchanted weapons & armor can be good)
