The game's setting would make some of these animals a bit awkward to implement, i mean, H&H is basically Northern European/Germanic (think gauls) in its lore, shouldnt we have animals native to that region?

In that vein, i would like to see the rats, toads and chickens have a use, as they have none other than just being part of the background......Perhaps we could have rats as pests that can eat food found in a civilized area, maybe spread some disease? Im not sure about toads, chickens though can make for a supply of feathers, meat and eggs, maybe the feathers can be used with arrows to give them flights, which adds a to-hit multiplyer to them, allowing better chances to hit.

Actually, lions used to roam across the European continent during human history. They were all killed off.

Sabre-toothed tigers also lived in Europe. For that matter, so did dinosaurs.

The animal I want to see the most is the wolf. New dangerous predator, spawning in groups out Mordor way. Left to their own devices, they could hunt cows and sheep in a manner similar to how foxes hunt rabbits and chickens. Wolves would have pups, which could be picked up like chickens or rabbits and strangled.
Strangled, OR...
Taken home and raised as pets. New skills would obviously needed, but I really, really want dogs in this game.
Guard dogs that patrol your claim or village when you are offline.
Tracking dogs that help you hunt deer or bear or rabbits, much like an animate dowsing rod.
Bear/boar/wolf hounds that hold the big guys off you while you fill them with arrows.
Retrievers, that swim out into deep water to get the ducks you just shot and bring them back for you.
Pack dogs, that can...um...pack things
and last but not least,
Cihuahuas, that would bark constantly and lower the happiness of every player within earshot, except the owner, who would think it was cute.
Edit -- oh yes, i forgot the Toadkiller Dogs. Need them too.
