I request a recipe for a lovely borscht that includes Beets, their leaves, and carrots.

Ah, so that's what the white stuff on borscht is; I had been wondering. I had guessed it was creme fraiche, not actually having eaten it.

Smetana goes into virtually everything, so it'd be a nice thing to have. Could work kinda like pepper, I guess.

Sour cream.... (Creme Fraiche/Smetana)

Milk + Vinegar + wooden holding device = soured cream

Milk should not be storable in liquid form anyway.
Milk + bucket/barrel = smetana (sourcream for those wondering)

But what if a recipe just needs milk? Pancakes for example, you don't make the batter out of curd or butter, you use the liquid form of milk.
