Currently, milk is only good for making butter.
While much of the world is lactose intolerant, in regions such as prehistoric Norway the trend is reversed, and most adults could eat (or rather, drink) milk easily even in it's raw state. Perhaps this could grant some hunger filling and restore stamina. Since "milk makes strong bones" this would presumably improve constitution.
Then there's cheeses, but I'm sure those are planned.
Some recipes call for cream rather than butter, so that could add a few baked goods.
Oh, and even though it isn't necessarily wise, it should be possible to eat butter or raw flour for small amounts of hunger satisfaction, as it makes little sense for someone lost with a bunch of raw food to starve because they don't have an oven to make bread in.
