i'd say around 50 since it's a pretty decent size cap but it's also not overkill like those people that stack 100+ before a fight.

TBH I think eliminating 20 minutes of coin stacking at start of combat would make it more enjoyable. The meta would definitely change, but I think it'd be for the better.

Remove IP requirement for defensive moves, rework defense moves a bit on the aspect on how much you can spam them without IP, the more you use them in a interval of time the less effective they are and add some other modifiers too perhaps, hunting will become alot better too. Not sure about pvp gank balance aspect tho of this.

Capping them at 50 or other silly workarounds won't fix the problem.

I think using openings on yourself and the target as requirements could replace IP in some cases.

Maybe using attacks increases the amount a defense move removes from you, so fighting back is incentivized, or something along those lines
