Geysers that act like natural wells? Also, it could spew water every now and then, and whenever it spews, there'd be a chance of some kind of forage-able/curiosity lying around it?

Thickets could have a thicket bushes, that would act like trees. Take a seedling, grow it via the usual tree growing methods, and plant it. Anyone walking in the "area" of it, would be slowed to a crawl, and constantly get thorns in their feet if they don't have shoes on. Obviously you can just chop it down to get rid of it.

lol, if you made it so that the thicket tree had to be plowed to be gotton rid of it could almost work as another layer of defence

hey, how about blackberrys?
grow as bushes
you can harvest berrys with a little chance of getting a thorn (even if you wear shoes/gloves)

use the berry then to replant a bush, that only needs one tile, so you can make a (defensive) hedge, as you can walk through the bush but with a huge chance of thorns, crawl speed and a lot of stamina drain
getting rid of the bushes is also hard, like clearing a stump, but with two steps (cut down and dig out - so its basically twice as hard)

to not make it that easy and have a 20tiles hedge layer i would say the bush only produces (average) a berry per (ingame/real life?) week, so that it produces berry only after several decay hits

What about random high exploration * per mineral rocks that you can see and mine randomly up to 3 times, and get random ores for them?
Only appears on mountain and only up to iron ore, and has no gold or silver...

Or maybe a hidden "rock quarry" spot you can mine on the surface of the mountain?

This makes it possible to get scrap metals to smelt for basic metal use at least, if you can't get a mine there.

A mineral/gem related curiosity could do too... Maybe a mineral stone you can randomly find while mining those mineral rocks.

Thickets need to spread as time progress and should be made even worse then they currently are.
