We have the current mechanics because that used to be possible. That is just as bad just in the other direction. Although with just AD and Sodom having brickbashers in w3 there was at least some kind of stability. Also, yes mountain vaults are not the problem. Island, swamp and underground vaults are.
It would only be able to be destroyed by hand if left open and attacked from the side, corner post's and normal walls would need a ram. It would still offer the same amount of protection for villages, only hearth vaults would be put at a disadvantage.
if someone makes a village on a island, in a swampy area or underground is it really a vault? with careful planing I don't see how they have any more protection than a normal village apart from maybe one or two more walls to go past, they are a lot harder to protect and repair then a mountain vault.
it is hard work to make a village on a island, in a swamp or underground. it would make scene that it would be harder to break into.
