That's neither realistic nor is it good mechanics. If you've ever gone hunting and seen an injured animal take off, if anything they're god**** faster than normal for several miles. Also **** bears. You can shoot them twice in the ****ing head and they'll still be charging at you at full speed.
In terms of game mechanics, no. Hunting is already painfully easy enough without gimping animals who are mildly injured before hand and allowing them to be easily kited through water to slow them down.

Turns out that, like all living languages, words can attain new meaning and, especially in english, we can rework words to carve out the definitions we need! It's like magic except, you know, really common. Nerf, nerfing, nerfed, gimped, gimping, etc. should not cause you to so much as bat an eye when discussing a video game, at least not for their usage.
