How do I defend myself from others?

As I was hunting I asked myself a question. It's impossible to fight in a melee against a high lp player in this game if you are not as freak as him/her, but would it be possible to raise your perc. and focus in marksmanship so you can shoot down the atackers from the safety of your palisade? Is it viable? thanks!

I know lots of things have changed since W3 but I remember one of my W3 Village-mates getting whacked by a super high-Q bone arrow strait thru his steel-plate (dyeing there-after). The plate took a nerf hit-point wise too. Is plate immune to all ranged fire now?

Not immune but if your quality is high enough then it will block enough damage to prevent arrows from ever punching through. When dealing with ranged items then it's a matter of quality. High quality r-bows will eventually punch through steel plate and kill someone. The issue is how long this takes -- you may be there for quite awhile before it happens. If they're running actual helmets and leggings then this can also contribute.

The fighting system in this game is fucking ridiculous, I will acept this and just farm or whatever.

You can definitely kill people with marksmanship.

Just make sure they have no armor and are AFK the whole time.

Obviously you never held a hand on good rbow.

Marksmanship is cool in begining to kill animals and afk newbies, but for sure isn't usable in combat 1v1, even over walls, since the one being damaged will run after first hit if he isn't 1-hit KOed. So if you wanna be usefull marksman, you need to have quite a bit of time to invest into grinding good perception, having mm always above double q of your wbow or tripple over your rbow and at the end, good industry to support you with best possible q of bows.

If you don't have that, then just have enough mm to focus on animals.

Archers are support troops. I'd say 1 per 4-5 melee fighters is about optimal for group combat.
