Just corner it when it flees (if you survive that long), and avoid shallow water at all costs

Get a sword and a horse. Lynxes are around 300 hp. Two chops to make the cat flee then max speed on the horse and chop again to finish. Bring enough deflection and hp (or stats) to survive for at least two chops.

A decent bow could do it too if you don't mind getting KO'd once or twice.
