If most of the world is a giant plains, where's the tall grasses? I think that'd be a bit more realistic to have that. Just recolor the wheat green and make it unharvestable.
Foxes could hide in it, and maybe, if you want to find things hidden under the grass, you'd need a scythe tool to thresh it down. This could give actual grass seeds as well.
Although, currently hops/hemp are being used for that mostly.
EDIT: Adding to the grass planting, you should have to have a piece of straw to lay over it as well. Also, rain would be cool. I'm not trying to make this into a Harvest Moon thread, but I think plants should have to be watered, but it shouldn't really be tedious. Rain would just give you some time off to go do other things.

As for the grass seeds, If you were to differentiate it, planting THAT grass seed would result in growing wild grass where you may just want normal grass.

Hmm, didn't think of it like that. It'd be cool to plant the tall grasses to hide things. Maybe if it's tall enough, make mazes out of it :P

I was thinking tall grass would fit in well. That and maybe some wildflowers- just something to give more variety to the map.

I'd imagine that you could harvest tall grass for hay and it would drop fewer seeds than wheat.

Well, I imagine when trees finally can plant themselves we will get all kinds of plants, from flowers, to bushes, to thorns, to shrubbery just spreading itself across the landscape

Also, small berry bushes would be nice. Pick a basket full of berries and make them into jam. Jam could be used on...bread...just for the hell of it :P

Thorns. Yeah i'd like to see those make it into the game.

I don't know, I get a lot of lag walking through a big wheat field.
