You can practice this yourselves a bit by having one of you chase the other and if you can lose agro and teleport away successfully then you're probably doing something right. Every encounter shouldn't necessarily end in death, possibly just a KO but not death every time.
Maybe you should preface this with go find a a plae where you can get ganked and then practice running from those types of people? practicing running from another another person who has no idea how to PVP dont think you are really going to learn much because that person probably has no idea how to actually chase either..........
I mean its really not that hard.
I'll give a few things you can do/know.
You stop sprinting/running at 50% energy. So it's probably good to drink before you hit 50%
You slow yourself down if you're clicking too much and changing directions too many times.
You should have bunny slippers with you at all times, and if your client doesn't have auto switch for bunny slippers then you should probably just wear them. Clicking bunnies while wearing bunny slippers makes you go faster.
If you have foraging credo, clicking critters and birds makes you slightly faster as well, so if you see them on your screen you should be clicking towards them. Birds are really good because they fly away and you can almost indefinitely follow them for a speed boost.
You should run over nearly every speed boost unless it's completely out of the way as it will make you run faster.
You should carry a coracle with you at all times too. Either in inventory or on your back.
Note: Look for things like rivers, etc where you may find a dugout or boat that can allow you to escape this way as well especially if person chasing you does not have a coracle with them. Sometimes they don't.
Just going out and practicing things like this with each other will probably make you top 90th percentile of people that can run away for more than 20-30 seconds.
