And maybe we could use them on other meats too-smoked venison, smoked beef, each with different FEP benefits.

I like this idea.

I like this idea.

As an alternative, they could make smoked meats provide the same benefits as roasted ones and treat the smokehouse like a kiln - you could leave a bunch of food in there to cook, then forget about it

I'm thinking a smokehouse would be more like a crucible, but would make meats of a much higher value because of the annoyance in obtaining them.

I'm not sure how long smokehouses ran back then, but I know that fish often smoke for three days or more to give them that smoky flavor.
